So I had a rather odd question floating around in my head today about synths:
I heard that while playing a Moog Prodigy you can grab any knob and change it as you're going along. What other kinds of synths can do that? I have a microKorg, but it's kind of a digital one, so it's hard to find out exactly what you want to do unless you wanna spend a half-hour looking for the right effect to change. So in essence, what others have that ability? Just knobs only, no screens or digital numerical things.

Any "vintage" analog synth will do that.

Just because a synth has a screen doesn't mean that it can't have a dedicated knob for every synth parameter. A number of new synths have knobs for all or almost all parameters. A relatively inexpensive example is the Roland SH-201. The Moog Voyager is a more expensive example.

People with lots of spare money that don't want "screens or digital numerical things" tend to buy modular synths these days--it seems new modular stuff has exploded into the marketplace.
